TOFU, CRUNCHY BAKED TOFU
The batter is
1 cups+- non dairy milk,
1 cup of your favorite flour, (I used half white and wheat flour)
1 T Italian Seasoning
2 T Nutritional yeast
1 T dried Dill
1 T flax meal
1tsp all purpose seasoning, or creole seasoning for a little extra kick
1-2T Sriracha
10 oz Panko bread crumbs
*1 10 oz pkg of Extra firm Tofu, drained and pressed, chopped in 1 inch pieces
S&P to taste.
Preheat oven to 400 degrees. In small bowl mix milk, then flour, hot sauce, and seasonings. Add more or less, but make it about the consistency of a med thick pancake batter. Drop the tofu pieces into the batter carefully, then transfer into the Panko in large dish. Put on baking sheet with parchment paper. Bake at 400 for 15 to 18 min each side turning once or as needed. Oven temperatures and times may vary. Bake until med golden brown. Use your favorite dip, we really enjoyed bbq sauce.
*If you have the time, I would recommend after draining and pressing your tofu, that you marinate it overnight in a mixture of veg broth, soy sauce, and poultry seasoning. That makes this delicious recipe even better!
