"CHICKEN BREAST" Vegan Style
If you haven't yet tried Seitan, here is a good chance to try it without making a huge batch. It's a super easy recipe, just takes some cooking time. Makes 2 fillets.
Dry Ingredients:
4 heaping T Vital Wheat Gluten
1 heaping T Almond flour, or Flour of your choice.
1/2 tsp garlic powder
1 tsp onion powder or dried onions
1/2 tsp Poultry Seasoning
1/2 tsp All Purpose Seasoning
s&p to taste

Wet Ingredients:
1/4 cup warm water
2 oz extra firm tofu
1/2 tsp Better than Bouillon paste
1/2 tsp peanut butter
Mix dry ingredients together very well. Mix wet ingredients in nutribullet for 30 sec. Then add the wet ingredient to the dry, stir until it forms a ball. Then remove from bowl and knead for 2-3 minutes. Form into two chicken breast shapes. Add more water if needed, just 1 T at a time. Keep in mind they will double in size. Make as thin as you can so they wont be too thick. Then put the patties into a small pan of hot simmering water, (not boiling) with some extra spices or bouillon (just enough water in the pan to cover the top of fillets) keep the heat to a light simmer. Simmer covered for 45 min, turning carefully occasionally. Now, you can lightly bread and bake these like I did for a delicious chicken fillet. I have also baked them in the air fryer for about 20 min for an extra crunchy filet. That may be my favorite way of finishing them off. I was surprised how much this tasted like chicken. It just goes to show it is all about the proper seasoning.
To bake, after simmering is complete you will need the following ingredients:
2 cups Panko, cornmeal, or your own favorite crunchy type coating
Pull fillets directly from the simmering pan, simply dip into the Panko (or your chosen coating) and coat both sides well with the breading. Put on cookie sheet or baking pan. Bake at 400 degrees on parchment paper for 30 min turning once. These could also be fried on the stovetop if you prefer. I like to bake it in the oven to keep it lower fat. These are so good as a crispy chicken sandwich with your favorite plant based mayo, or chop it up and add to salads.
If you like a spicy "chicken" sandwich considering adding a tsp of crushed red chili pepper to the dry ingredients. This is 2 servings, approx 230 calories each. Enjoy!
