SUMMER ROLLS
Yeah, I know... they do look weird! I thought so too... and then, well... I tasted them. Wow! It's like a crispy little salad in an easy to hold light wrap that dips easily into whatever you like, sweet and sour sauce, peanut sauce, sweet chili sauce, soy sauce, or your favorite salad dressing. Very low in calories if you use fresh raw veggies, so dig in and have as many as you like. My fillings are just a suggestion, fill them with your favorite fresh veggies!
Ingredients:
8 rice paper rolls
4 cups fresh spinach, or your favorite crisp lettuce (romaine is good too)
3-4 cloves of roasted garlic
1/2 sweet onion cut in slivers
1 cup carrots cut in slivers
1 large ripe avocado, or one roasted sweet potato, cut in slivers
1/2 of fresh red pepper, cut in slivers
Soak each wrap in tap water for about 30 seconds, then put fillings in and simply roll up like a burrito. One turn, bend each side in, then continue rolling. They don't have to be perfect, you will get better the more you make them. Put on plate, enjoy immediately, or cover tightly, and refrigerate for about an hour before serving. They firm up a bit after refrigeration and are a bit easier to hold. These were especially delicious to me dipped into Franks Sweet Chili sauce. I have made these the night before and taken them to work the next day. Store in airtight Tupperware container, If they should dry up too much simply spray lightly with water. Enjoy!
