Black soybeans have lots of fiber, so the net carbs are low. I think they taste very similar to regular black beans, so you can substitute them wherever you would use black beans. I have only been able to find them in my local health food store or online. The brand I use is Eden.
INGREDIENTS: 3 T Almond Flour 1/4 cup diced Onions 1/4 cup roasted red peppers diced 1 Tablespoon Psyllium Husk Powder 1 T Vital Wheat Gluten 1 15 oz can Black Soybeans (drained and rinsed) 2 Tablespoons of the bean juice from the can 1 T ketchup 1/2 tsp garlic powder 1/4 tsp crushed red chili pepper Salt and Pepper to taste
Drain and rinse your can of soy beans. Save 2-3 tablespoons of the juice from beans. Put beans in bowl, and smash with fork, leaving some chunks. If you prefer you can do this in a food processor but be careful to only pulse a few times so you don't turn it into a paste, you want some bean chunks. Add all the rest of the ingredients. Mix well and add your bean juice as needed to get them to stick together well. Form into 9 meatballs, and you can bake these in the air fryer for about 20-25 min shaking once at about the 10 minute mark, until good and crispy. You can also bake in a regular oven for about 35-40 min turning occasionally. Eat on their own, or in a wrap for a delicious sandwich. Each meatball is approx 80 calories, and 3 net carbs.
