Jackfruit Crabcakes
If you have never tried jackfruit, then you are in for a treat! If you are already a jackfruit fan like I am, I think you will enjoy these "crab"cakes. The texture is spot on, and the mild flavors will delight your tastebuds. If you like it a little hot and spicy like I do, then dip in your favorite cocktail sauce, vegan mayo, or my favorite Sriracha Sauce. These crabcakes were a big hit in my house.... :)
Ingredients:
2 cans Young Green Jackfruit (packed in WATER or Brine)
1/2 diced med sweet onion
2 ribs celery diced
1 med carrot, shredded
1/2 tsp Old Bay Seasoning, more or less to personal taste (important ingredient)
1/4 tsp onion powder
1/4 tsp garlic powder
2 T Ground Flax meal with 5 T warm water soaking for 15 min. (flax egg)
1/4 tsp all purpose seasoning, I used Everglades
1.5 cups Panko Bread Crumbs
1 T Sriracha Sauce
1 T Yellow Mustard
Small dash of Cayenne Pepper (optional)
S&P to taste
Make sure you purchase green jackfruit that is packed in water or brine, NOT the syrup kind. Drain and rinse the jackfruit well. Then cut off all of the hard points, this is the core of the jackfruit and really not suitable for this dish. Discard any seeds you may find as well. Shred well with your fingers, then chop up very small or put in food processor for just a couple pulses. I like to keep some chunks. Put in mixing bowl, add all the rest of the ingredients and stir well. For best results, get in there with your hands and mix it together real well, add a T of water if needed to get the right consistency or a bit more panko. Patty up, and bake in 425 degree oven for approx 30 min, flipping once. Oven times may vary, bake until brown and crunchy. If you prefer, you can fry in a skillet, but just use enough pan spray so it doesn't stick. Dip into your favorite sauce or put on a bun and enjoy as a sandwich. Enjoy!
