Granola Bars and Granola Snack Mix
These can be a great snack to take along with you just about anywhere. So easy! The hardest part of this recipe is letting them cool off completely before eating! Feel free to change up the ingredients with your own favorite nuts, seeds, dried fruits, etc. Just make sure they are all about the same size. If you use dates, just make sure you chop them up smaller. I used maple syrup for sweetness, but you could use agave, or any favorite sweetener. I really like the toasted coconut in these, it adds such a good flavor. If you are looking for a granola snack instead of bars, just cut the oats in half.
Dry Ingredients:
3/4 cup Organic Shredded Coconut
1/2 cup Almonds
1/2 cup Sunflower Seeds
1/2 cup Walnuts
1/2 cup Roasted Peanuts
1/2 cup Craisins or Raisins
3 T Vegan Chocolate Chips
1 cup Quick Oats (uncooked) **1/2 Cup Quick Oats for Granola Snack (it wont stick together in bars, but makes a great snack)
3 T Oat Flour or flour of your choice (to make oat flour, put dry quick oats put into food processor until turned into powder)
Wet Ingredients:
1/2 cup 100% Maple Syrup
1/2 t Pure Vanilla Flavoring
1/4 t Ground Cinnamon
1 T Brown Sugar
If you like a soft and chewy granola bar, simply add a very ripe banana to your wet ingredients. I personally really prefer this crunchy version.
Pre toast the nuts, seeds, and coconut in 300 degree oven for 10 min until coconut is lightly browned stirring occasionally. Set aside.
In medium bowl combine all the wet ingredients until smooth. Combine all dry ingredients in another bowl stirring well, then add the wet ingredients, stir thoroughly using hands if needed. It should be very thick and sticky. Line cookie sheet or shallow baking pan with parchment paper and spread mixture in thin layer forming a rectangle, pressing down firmly. I used an 8x8 glass pan. Bake at 350 degrees for approx 25 min until edges are med brown and top is light brown. Check often after 20 min, they can go from perfect to crispy critters quickly. Remove from oven and slice into rectangles. Completely cool before serving. Put in refrigerator for 15 min to cool quickly. Then cut again if needed. These are just delicious, and a pretty healthy snack. I often take one on busy mornings to eat on my way to work, my little breakfast on the run. Makes 12-14 med rectangle servings.
