The Buddha Bowl. You gotta love it, because you really can't go wrong. There are no rules, start off with a little rice or noodles, and add your favorites, cooked, steamed, raw, or a mixture of all of the above. For this one, my main ingredients were the baked tofu, and the roasted butternut squash. The rest is like icing on the cake! Give this a try but feel free to substitute with your own favorites.
Ingredients:
1 cup cooked rice or Asian noodles
1/2 sm roasted butternut squash, cubed
1/2 roasted green or red pepper, diced.
1/4 cup chopped green onion, raw
1/2 block tofu, cut in squares or strips, and baked with Sriracha Sauce lightly drizzled over the top
1 cup raw spinach, chopped
3 roasted mushrooms, sliced in half
1/4 cup of Chopped Walnuts
2 T of Roasted Sunflower Seeds
S&P to taste
Peanut Sauce to drizzle over the top.
Roast the Tofu, squash, pepper, and mushrooms in oven. 400 degrees, remove each as they are done, and cut to your preferred sizes. The rest is easy, simply put your rice or noodles in first, then fill that bowl with all the rest of your favorite goodies, sprinkle it with the nuts and seeds, and drizzle a touch of the Peanut Sauce over the top, and enjoy! This is a great dish to use up leftovers, and it's different every time.
This is one very large serving, so double or triple depending how many you are serving.
